I’m a potato lover. You could say potatoes are my favorite food…and this is one of my favorite ways to eat taters!! I posted a roast video this week that featured these potatoes and got so many requests for the recipe I thought I’d best oblige!
What I love about this recipe is it’s a comparatively quick and simple way to get an impressive, crispy, extra flavorful potato side.
Because the potatoes are boiled first they don’t take long in the oven, the edges crisp EVERY single time, and even without the added garlic parsley butter drizzle the flavor is next level.
