My husband says his favorite food is rice with stuff on it. Good thing I love a bowl dinner, so we have come up with many variations of the “rice with stuff bowl” and this recent development is up there with my all time favorites.
Juicy little meatballs. Sticky sweet teriyaki sauce. Fresh slaw with a little lime zing. Perfection.
The perfect weeknight dinner, and I love to make extra for meal prep- keep a tub of rice, some meatballs and slaw in the fridge and you are good to go for a quick meal anytime, it keeps and reheats so well. The meatballs are a great freezer meal to stash for postpartum.

For some extra gut benefits, replace the slaw with sauerkraut and just drizzle the miso dressing over everything!
The gentle heat, the aromatics and the mineral rich miso make this a really nourishing option for times of self care and healing like the menstrual phase, postpartum, or recovery from illness or injury.
The only time consuming part of this recipe is the meatballs, but if you don’t have time to roll out a ton of meatballs you could totally just sauté the beef crumbly style, or make it into a sort of meatloaf.
