Ok I first had ratatouille at a friends house as a kid and was not stoked, to say the least. Of course at the time I staunchly disliked courgettes, eggplant, and onions (wild). Actually, I’ve never been a huge fan of eggplant until recently when I learned it truly is alll about the way you cook it.
So, here is my ratatouille recipe that even my (semi-picky) husband cant stop raving about. You dont have to slice the veggies all fancy and arrange them BUT i do think it does something- rather than the texture being one note and smooshy, you get nice slender bites of each thing, the top side slightly crispy and the underside soft and tender. Divine.
Definitely a recipe you can ad-lib on a little and measure with your heart- it’s one of those simple wonders, no fancy surprising ingredients. I think it’s more about the fresh produce and the time spent.
PERFECT for the follicular and ovulation phase- all that fiber to help detox excess estrogen and lots of Vitamin C to help offset oncoming PMS!
