There’s crock pot girlies and then there’s instant pot girlies and I am 100000000% the latter. I finally got an instant pot this year and when I tell you it was the BEST $100 I have ever ever spent I am not kidding.
Crock pots are so convenient if you are good at planning ahead but if you’re anything like meeee, then that is not your strong suit. Forgot to get out meat to thaw and you have 1 hr until dinner? Instant pot. Wanted to make pot roast but forgot it takes literally houuuurs? Instant pot.
OR- your’e horribly sick and can’t get to a grocery store but you have a whole frozen chicken and need bone broth chicken soup NOW?! Yes. Instant pot.
I have the smaller instant pot and my chicken was juuuuuust a little too big to fit into it frozen. Bummer. So I had to sit it on the counter overnight to defrost rather than getting it from frozen to cooked in an hour but still- I managed to cook a super juicy “roast” chicken, pick off all the meat to use later, use the carcass for a super quick & gelatinous bone broth and then make a quick and easy chicken soup ALL IN MY INSTANT POT, in one day, with the most minimal effort. Less time, less cleanup, more soup. Genius.
So without further ado, here’s a very simple, no frills, heart healthy whole-food recipe (sorry I don’t even have great photos for you I was FAR too sick while making this 😭)-
