Favorite Fall Salad

a last minute thanksgiving submission

Honestly this is so last minute I second guessed sharing it but if not for thanksgiving, this salad will GIVE all through fall and winter. BUT if you are looking for a good last minute side for thanksgiving or friendsgiving later in the week, you should be able to whip this one up pretty easily.

We just got back from two weeks in Bali with the little ones- a glorious trip but the 35 hour journey home and the gnarly jet leg we STILL cant get over has me second guessing my whole life. Plus, with it being so close to the holidays I’m looking for easy ways to enter the festivities without too much planning or prep.

ENTER FALL SALAD.

3 things make this a perfect side for thanksgiving-

• only spinach for the greens. Spinach is great warm or cold so works if it gets mixed up with gravy or joins a bite of turkey.

• acorn squash- need i say more?

• spiced candied pecans- the cherry on top that takes this salad from basic to impressive with not much effort. The little bit of heat to balance out the sweet.

Of course, the measurements are somewhat loose dependent upon the size of your salad etc, so play it by ear there but I have also included the recipe for the candied pecans and a killer maple vinaigrette!
