Maybe it’s just me but does anyone else seem to take a whole hour some days to make literal scrambled eggs and toast?? After spending my teens and 20’s neverrrr eating breakfast I’ve finally joined the “most important meal of the day” club. Seeing as hormone regulation is so connected to blood sugar balance, what you eat first thing is actually so important and I always lean towards a protein-and-fats heavy first meal. But when I tell you I am such a slooowww morning person I’m not kidding, and if I don’t manage to get up and through breakfast quickly the whole day is thrown off!
So yeah thats my Ted Talk on why you should 10000% food prep for breakfast, if nothing else. ESPECIALLY if you feel so busy that it seems like you have no time to food prep. And if you’re gonna prep breakfasts, I would like to humbly propose this egg bite recipe.
I have made egg bites for yeeears and always been just slightly disappointed in the outcome. I tried a bunch of different techniques and they always seemed to deflate- still totally fine for a quick brekkie but not the luscious eggy pillows I desired.
Recently, though, I’ve cracked the code and am SO glad to finally share them with you. I know, so dramatic it’s just eggs- but truly I feel so strongly about breakfast (mother would be so proud).
