I don’t care if it makes me a Basic Becky, I love fall, I love pumpkin spice, and I love it in my coffee. Lately I’ve been trying to avoid the coffee shops, just to save a little on extra spending, and have been trying to avoid dairy so when I tell you I was DETERMINED to make a good at home coffee creamer I’m not kidding.
First, if you have ever been made to feel bad about loving pumpkin spice at this time of year, be encouraged. Cinnamon, clove, ginger, nutmeg, allspice- all have medicinal benefits for immune health, infection healing, and even mental health! I had tried a couple of pumpkin spice creamer recipes before and not been super impressed, and when I tried to make a dairy free one, initially I just used coconut milk and pumpkin puree and it was just…not it.
I’ve landed on something pretty fantastic, but of course there is so much room for experimentation! I’ve used sweetened condensed coconut milk, but if you can find it you can also use sweetened condensed oat milk. Instead of the coconut cream and oat milk you could just use a good non-dairy creamer like oat or cashew etc.
I personally add plenty of spice because it’s so good for you, as well as mushroom powders for added immune boosting and brain health benefits!
Recipe
1 350g can Sweetened condensed coconut milk (or about 1.5 c)
2/3 c coconut cream
1c nondairy milk (I use oat)
1c pumpkin puree
1tsp Cinnamon
1/2 tsp Nutmeg
1/2 tsp Ginger
1/4 tsp Clove
Pinch of salt
Pinch of black pepper
2-3 Tbsp Maple Syrup (optional)
2-3 Tbsp Mushroom powders (Chaga, Reishi, Lions Mane)
Method
Combine all ingredients, adjusting for personal taste.
Blend with an immersion blender or in an upright blender, or whisk thoroughly with some elbow grease!
Use liberally in coffee or literally anything else you can think of. Should last a week in the fridge!
I’ve made similar things and have frozen some in my ice cube tray to extend the life!!! Can’t wait to try this. ☕️
