This is one of those recipes that came to me, as if by *magic*. I was trying to think of new ways to use turkey- it’s rich in B vitamins, folate, magnesium, zinc and choline, all of which make it a great protein for the luteal phase as it supports progesterone production (which should help ease PMS) and for pregnancy too!
I’m honestly not the biggest fan of turkey but it makes GREAT meatballs- super juicy! But plain old turkey meatball soup didn’t sound quite it…so looking at the other luteal phase foods- leek, sweet potato, chickpeas, brown rice, it came to me- curry!
And lordyyyy was it an inspired thought cus this soup was so comforting, so yummy, super extra nutritious with all of those spices and goodies plus a super hit with everyone who ate it!
