I’ve said I’m more of an instant pot girlie than a crockpot girlie (more last minute unthawed panic dinner than pre meditated cook-ahead-of-time vibes) but I might be entering a new era.
Kandreas family came to visit last week- as a SURPRISE, might I add. He hadn’t seen them in a whole year and we managed to pull of the surprise of the century, it was so beautiful to witness. But, seeing as though we live an hour from town, I wanted to head to meet them at the airport and knew i would be arriving after dinner time with a troupe of hungry travelers. So, out the instant pot comes, slow cooker mode engage.
Truly I kept this recipe so simple because I was in a mad rush, but you could add so much to it or make it your own pretty easily. I also kept it mild because a bunch of toddlers were going to be eating it but I definitely encourage the addition of more jalapeños, and dare I say even a chipotle pepper or two?
