Crispy Parmesan Zucchini
the veggie side of the summer?
I’m not gonna beat around the bush. Zucchini, roasted, coated in crispy paprika parmesan. It’s so good.
Somehow I’ve been eating zucchini the same my whole life- slice it up and sauté it, dice and roast it, grate it for fritters….and the other day, faced with an abnormally large pile of zucchini that were about to turn bad, I thought surely there must be another way…a crispier way.
I realize I’m no genius, I looked it up and saw that this recipe has indeed been done before HOWEVER- I like the way I do it. Some extra seasoning in the cheese never hurt anyone!
It’s a really easy way to bring a little surprise to the table (and encourage the kids to eat zucchini).
