Birria style stew
a luteal phase wonder with sweet potato, kale and tons of flavor
This is a birria inspired stew (I could never deign to write a recipe for legit birria, for that I always defer to the source) that I dreamt up after many a luteal phase craving. It’s the perfect combination of spicy, savory and umami but with the addition of root veggies for some carb comfort and sweetness and kale for extra fiber that make this a one pot wonder.
Of course, you can eat this during any phase of your cycle or season of life, but for women, it’s going to be extra supportive in the couple of weeks before menstruation. The main nutritional goals during this phase are progesterone supportive foods, magnesium and B vitamin rich foods, and complex carbohydrates.
